World Institute of Kimchi

The World Institute of Kimchi (WiKim) is worldwide the only national research institute dedicated exclusively to the study and advancement of kimchi and fermented foods.

The South Korea Mobility Program offers data science talents the opportunity to spend up to three months at the World Institute of Kimchi. Participants join an interdisciplinary environment where microbiology, biotechnology, nutrition science, and data analytics converge.

About NST

National Research Council of Science and Technology (NST)

The National Research Council of Science and Technology (NST) currently brings together 23 leading research institutes active in a wide range of fields – from materials science, biotechnology, and energy to space exploration, robotics, and information and communication technologies. It coordinates their strategic direction, fosters synergies among the institutes, and supports the government in shaping research and innovation strategies.

In doing so, NST plays a key role in advancing scientific excellence in areas of societal relevance and in transferring technological innovations to industry and society. In addition, it strengthens the international networks of Korean research and enables joint projects with leading research organizations worldwide.

WiKim was founded in 2010 to build a scientific foundation for kimchi research and to promote this cultural heritage internationally. The institute investigates microbial processes, develops novel starter cultures, and optimizes production methods to enhance quality, safety, and health benefits.

Research spans from the isolation and characterization of lactic acid bacteria to functional analysis of bioactive compounds and large-scale fermentation studies. A special focus is placed on leveraging big data and AI to predict and control complex fermentation dynamics.

WiKim also collaborates closely with international research organizations to share knowledge and advance global food fermentation science.

Research priorities: 

The Norwegian Computing Center is one of Europe’s largest research institutions in the field of applied statistics.

The institute’s research activities focus on three core thematic areas:

  • Statistical modelling, machine learning, and artificial intelligence (AI)
  • Information and communication technology (ICT)
  • Image analysis and Earth observation
